Recipe : " Alfajores" ....ummm delicioso!

sorry:on the first step is 1 cup butter and 3/4 granulated sugar
on the second step besides the 2 egg yolk add 1 whole egg
I'm following my own recipe as we speak ....thanks.
                          Get ready to make '' Alfajores" ummm delocioso!!..are you ready
                           First you need to know this a Peruvian Desert  originated in ''Peru''
                           in the 1,700 when the spaniards brougth their cookie recipe and
                           Peru took it and remodified with Peruvian ingredients & wow!
                           Find your favorite Peruvian music, I think this is very Important
                           you need to use your 5 senses...somehow the Peruvian flavor is
                           born by this main ingredient.....enjoy....this was my
                           second time making them...remenber just be open minded and
                           and be happy and selfconfident that you can do it.
                     
                        1.- Beat until flufy 1 cup butter and 3/4 cup butter.
                        2.- Add and keep mixing :
                                      2 egg yolks (litgly mix)
                                     1 tablespoon vanilla
                                      2 teaspoon lemon rind
                        3.- In a separated bowl sift toguether:
                                     2   1/2 cup cornstarch
                                      1  2/3 cup flour
                                     1 pinch of salt
                                     1/4 teasp. Baking powder.
                         4.- Add the dry ingredients 1/2 cup & the time  ... mix....
                               you can use mixer or a fork or Peruvian Style using
                               yur beautifull clean hands..mix very well.
                               ( picture below).
                          5.- flour surface very well this the secret for them to be easy
                                to cup up and removed from surface..you can use round
                                shapes heart shapes make it into a large cake...(picture below)
                           6.- place on cookie sheet and cook at 375 for ..well here come the
                                the trickiest part....there have to be a litle of challenge now
                                if you have thin cookie or thick cookie a large one or small
                                you want to make them all the same thickness and only bake
                                them until yellow no brown or golden brown ...if you over cook
                                they wont melt in your mouth...soorryy...during this part I stay next
                                oven for my first batch and time it and watch and then I will use
                                 same temperature and time for the rest of my cookies..oufffff
                                Now with the challege out of the way...yummmm
                   
                          7.- have them cool off...and fill with condensed milk that have been
                                boil for 3 hours and cool off.
                           8.- Now Create a litle powder sugar or coconut to make the
                                sprinckles stick spread the cool  condensed milk around the edges
                                now is time.....take a bite....ummmmmm que rico, delicioso!!

" Alfajores in Singapore, thanks to me"

                                  
                           It was so much fun making this Peruvian cookie delicacy!!! que rico..
                            Is so easy to just take a bite..yummmmmm  they take you to haven and ...
                           brings you back for more.You place it in your mouth and starts just melting 
                            melting away without making any effort from your part, the filling follows
                           ....somebody please take them away from me ..I made
                           76 ..I will send some with Keven to share the rest who ever I see today!

Causa , Peruvian cuisine

                             Causa is a Peruvian dish is a summer version of mash potatoes.
                              using only 2 juice limes, 2 green chiles clean, 1/4 oil use a litle more
                              to be able to blend in blender add salt to taste..add to cool warm mash
                              Potatoes( 8 medium or 2 lbs) and knead until everything is mix .
                              Place in refrigerator for 1 hour. Shape mix mash potatoe
                               like Ice cream sandwiches..fill with 3 chicken breast cooked  and cool
                              and pull meat with fork mix with mayo & salt to taste..you can use tuna
                              avocado.....I use red onion slide and marinated with lemon and salt .
                               let your creative mind take over...enjoy!
                        
                          

Singapore Fruits either you love it or ....

                                   this fruit is called Dorian and is the most smelly fruit you have
                                   ever smell...you are phohibited to bring it insidea train even if is
                                  inside 100 plastic bags , is so smelly I think 1/2 singaporian like
                                  the other 1/2 just cannot standed ..the smell get in your nose your clothes
                                  they tell me it taste delicious ....no thank you..I stick to papayas!
                                     my favorite they are like litle aliens being born....you have
                                      to touched and eat it ..delicious little aliens!


                                     My friends favorite...I cant seem to be able to eat it...
                                       I tried but my taste buds are not aproving it...

                              I kep skipping this mangos because I thougth they were not mature
                               enough to eat...I was wrong they were always ready!

Boracay Island is beautifull!!

                  I'm in the Philipines with my three phillipinos Girlfriends ..that work
                  with Keven....they started by telling me what happens in Boracay stays
                   Boracay...
    
                       Philippines have thousands of Islands but this is their favorite..we flew and we
                       navigated to the island by boat..
                We stay in a amazing hotel with all you can eat...lots of people from Europe and Asia
                                 Beautifull..water ..I'm learning to unwind..and relax..


                                             
                                            I was rigth at home when I made some friends that
                                            wanted to do  whatever I ask them for a picture
                                           and this is the result .. a picture worth a thousand words!

                      
                    I learn to slow down life to just sit and enjoy the moment.....what a blessing.
                     
                                  Here I'm with my litle friends they wanted to see their faces in the
                                   camera..they were so curious they even took some amazing pictures
                                   themselfs but lost my camera with all their good shots...sad

                        O ne of my Dreams to have been born with an amazing singer voice
                           next best thing lipsinging...I ask them if they wanted to join me in one
                            of my dreams and they did ..it was so much fun!

Seco!!! Peruvian Cusine


               One of my favorite and easiest dishes to make ..Seco is one of a kind ....delicioso!

                         I always like designing clothing ..so I decided well lets see what you can do
                         I'm wearing a pillow case with extra fabic pin and tuck togueter  I always think
                         color is everything..fun fun...still raining well .....

                   a red ribbon and extra material what a way to create ..I need a sewing machine!

                             I'm just having fun..I have decided here in Sing there is no such a thing
                             as bad fashion ...have fun ..I wish I had a sewing machine..yikes!!...
                             it stop raining...it was fun while it lasted...ha!  ha! ha !

Sweet singapore !



                       The sweet Singaporian Girls, reminded so much of my girls because they all have
                         long dark hair...I think that is why I miss my girls....most of them are so sweet and
                         reserve & soft spoken ..I think is polite no to be loud..I have lots to learn..I'm the
                         opposite a Peruvian let loose in an MRT train smiling and making friends..oh well,
                         Silvia will always be Silvia...Happy Happy!!

         This have been a trip to remenber I have meet beautiful people and seeing amazing places   .
          I is so hard for me to believe there could be so much to see in such a small Island of Singapore.
          People are very friendly if you aproach them , otherwise they walk with a mission ..I brougth
          lots os smiles to share..it is the universal lenguage of friendship...I will miss you Sing.

Very amazing necklaces one is done with metal necklace with yarn for $650.00 and the other was just some kind of foam balls wih plastic  covered ith some kind of plastic wrap  price $450.00 I tell you there are some big spenders  here in Singapore I think its get to  point that it dosent matter if is plastic metal or wood as long as is very expensive the rich will buy just because is expensive if is inexpensive they will not buy everything is about brand, , the chinese are overbuilding and buying like there is no tomorrow , I supposed when people are opressed for a long time and they have to get it out their system!

Chinese pork a la Sweet!

     
                        Recipe: mix and marinate the following for two hours and then fried in a litle bit of oil.
                                  1 1/2 lb. beef or pork sliced         1medium onion sliced
                                   Soy sauce 5 Tbp                         Sugar 2 1/2 Tbp.
                                   Green onion chooped 4 Tbp.       Garlic finely minced 2 Tbp. 
                                    Sesame seeds 2 Tbp.                  2 Tbp. oil
                                    Black pepper 1/2 tsp.                  1 kiwi minced or 1 apple cut very fine
                                    I added finely sliced carrot wich I fried very ligthly and dry on paper towell
                                    do not fry more then 1 minute........serve over rice....Enjoy!

Recipe :"Chinese Duck a la Hope"

                      Here is a great recipe that I got from this sweet chinese lady , with her broken Inglish
                      and my spanglish ad a lot of sign lenguaje this what I got after she repeated me the recipe
                      fo 15 time..who know it migth not be the original recipe but it turn out to be one of my
                      best recipes ever!..lets begin:
                                        Ingredients: 1. duck cut in 6 pieces with head or without
                                                            2. sugar to taste
                                                            3. oil
                                                            4. chinese spice or 5 spices powder
                                                            5. 8 cloves
                                                            6. 1 large cinamon stick
                                                            7. Dark soy sauce like 3 cups
                                                            8. 2 Star aniseeds
                                                            9. 8 garlic teeth, chopped very small
                                                          10. 1/4 cup blue ginger ifcant find use regular ginger
                                                                 cut very small
                                                         
                   *  Proceed to rub Duck with 4 tablespoon of chinese seasoning
                     
                         preparation: 1.  Saute in oil like /3 cup, add ginger ,garlic until garlic is caramel color.
                                              2.  Add soy sauce , sugar to taste I added like 2 cups,and the  cinaom stick
                                                    cloves and stirr and stirr specially the bottom of te pan do this for like
                                                    5 minutes dont leave the pan alone you have to keep stirring or it will
                                                    get burn. Start medium heat and then at low medium.
                                              3.  remove from burner and quick add duck pieces and add enough water
                                                   until duck pieces are cover 1/2 of body. stir water and sauce.
                                               4. rigth awy place back in burner and place a lid and simmer @ medium
                                                   low and turn the duck pieces every 7 minutes andsimmer and keep
                                                   this for an hour for 1 hour .

                                This is the most amazing Duck I have ever tasted it was in between the taste of steak
                                 Sirloin and Chicken it was so tender ad yet well cook O love it! ..Bon appetite!

        I had a very traumatic experience, unless I really have to I will let the butcher do the cutting, yes sir!
